Fajitas

Sorry It has been awhile since I posted, I am have been pretty busy. But I did make a ton of food this last week so I do have a bunch of stuff to update. First are these Super Duper Easy Fajitas.
This is also a fairly healthy all in one meal. Complete with veggies, protein and carb. My kids loved it and so did my guests!

Thinly slice your fav. veggies. I love a lot of onions and red bell pepper, next time I don't think I will use green it was so bitter. I also occasionally use tomatoes as well.

Then I start saute'ing with a little EVOO and add some seasoning from a packet ( I usually use Fajita mix but I was out) I think this is just the easiest way to do it, so I use the cheat.
Once it has cooked down a little I add a little water to get the pan dripping on the bottom with a wisk.
Then I add some chicken tender pieces that I boiled.
Then put some in a warmed tortilla and a little sour cream and you got your self a Meal.

Easy Fajitas

1 red bell pepper
1 other color bell pepper
1 onion
3 roma tomatoes ( optional)

Thinly slice all of this and add to a saute pan (except for tomatoes) on med heat with some Olive Oil and a little butter. Then add some Fajita packet seasoning. After it has cooked down a little add about 1/4 cup water to pan and wisk up the drippings on the bottom. Then add cooked chicken in large pieces and mix together. Then add tomatoes at this time. Next cook down a little more till veggies are tender.
Put it together with a warm tortilla and a little sour cream.

My first Giveaway!!!!!

Ever since I started my blog I wanted to have a giveaway- I love getting free stuff and giving stuff away. Well last week I won 3 blog contests.

For Christmas my MIL gave us all KRUSTBUSTERS.
I don't know If any of you out there like Uncrustables- me and my family Love them. Especially my husband who is always stocking up on them. They are so nice and perfect to take places. Plus for some reason they are so much better than just a regular PB& J.
The Krustbuster is like an Uncrustable maker- you make whatever sandwich you want and then put it in the Krustbuster and it comes out de-crusted and sealed together.
It works great and is so much fun, my kids, my hubby and I all enjoy eating our sandwich so much better this way.

Fun with GREEN!

I got this recipe a couple of years ago at a cookie exchange, I loved it instantly. This is one of the few candy making recipes I have tried that I got right the first time. But for some reason a lot of people have a hard time with it, so I am going to give it to you Step by Step.

These Oreo Bon Bons are definitely Rich, they are beautiful and they are addictive. I have even had one person describe them as Heaven. If you are trying to impress these are definitely the puppies to do it with.

First place cookies one package of Oreos in a food processor ( I used mint for St. Patty's Day, use regular not double stuffed.) Then get them as fine as you can, I do two batches since my processor isn't very large.


After that add a package of softened cream cheese and mix together

ready, make sure it comes together like cookie dough.
my husband had the camera and was going crazy on the pictures, he loves taking pics for the food blog!
after the mixture is mixed roll into small balls, warning this is very messy, then place on a piece of parchment paper on a cookie sheet.

then stick a toothpick all the way down in each one, and put in the freezer for 1 hour
right before you take it out start melting the almond bark. I use half a package for a single batch. I slowly melt mine in a saucepan on low constantly stirring.
once melted I place in a short thin glass. my measuring cup works fine
then dip each one in, let the excess chocolate drip off, or a ring will form on the base of the bon bon. Also do not dip whole ball and don't get the toothpick
make sure you do this step fairly fast or the balls will start thawing and fall into the chocolate while dipping.
after dipping take out toothpicks
then melt some new chocolate, you can do white almond bark or add color to it, or use the colored candy melts. I do this part in the microwave stirring about every 10 seconds for 40 seconds. Using about 2 individual bars.
I dip it in and loop it around, it can get kind of messy so I am constantly wiping my hands so I don't get chocolate on the whole thing.

I usually add some sort of sprinkle before the top chocolate sets.
Then were done, it sounds like a lot more work than it is, but it will take quite a while with all the individual rolling and dipping. The recipe makes about 60-70 balls depending on the size.
For St. Patty's Day my MIL always does a green meal. This meal is probably my second favorite meal of the whole year.
I LOVE corn beef and cabbage and only usually have it on St. Patricks Day. She also make buttermilk muffins or cornbread 2 of my favs. This year there was also broccoli salad which I Love too. ( I know I love a lot of things, but there is not limit to how much food you can love and well the name of the blog is For the Love of Food so......)



Oreo Bon Bons

1 package Oreos ( Nutter Butters also work great)
1 package 8 oz. cream cheese
Chocolate Almond Bark ( Half a package)
White Almond Bark ( 2 bars)
tooth picks
wax paper/ silpat

Chop Oreos finely in chopper or food processor, mix well with cream cheese.
Form mixture into bite size balls and place on wax paper on a baking sheet. Place toothpicks in balls and freeze one hour.
Melt almond bark and dip balls in bark ( do not let choc. touch toothpicks) let set until bark is hardened.
Remove toothpicks
Melt white almond bark in microwave, drizzle over top or turn over and dip the top in white chocolate.

Best Bread EVER!

If you live in Mesa and have been to the Whole Grain Bread Company, you already know that their best bread is the Cinnamon Swirl. It doesn't last long once you bring it home, because it will get gobbled up just like that. One of the Young Women in our ward works there and I asked her to score me some bread since I was going to give her a tutorial on Oreo Bon Bons. She came through, and the other night dropped off a loaf!!!! I was so excited and have been being quite selfish with it. Thanks Em- you rock!


The next morning I made myself a scrumdiliumptious breakfast with a big fat piece of toast with butter.

Chalupa

A couple of years ago during an Enrichment night we had this dish called CHALUPA. One bite and I was hooked, I think I have made it for every big occasion since. It is a great meal to make for a large group of people and a definite crowd pleaser.
A couple of months ago I made way too much so I put the leftover in the freezer. The other day I pulled it out, thawed it and popped it in the microwave for about 10 min. and once again another scrumptious and easy meal, plus it tasted like I just made it that day. ( my husband kept asking where the crockpot was)



Chalupa

3lbs. pork roast
1 lb pinto beans
5 garlic cloves
1 can diced green chilis
1 Tbsp. ground cumin
2 tsp. salt
1 tsp. oregano
2 Tbsp. chili powder

Cover everything with water and cook in crock pot on low for 8 hours or until beans are tender! Then shred the pork and put back in . Serve with fritos, cheese, green onions, avacados, tomatoes, sour cream, salsa & anything else that sounds good with it.

So Proud of Me!!!!!

I did not grow up in a Yeast friendly home. So every time I use it I get nervous. I have made bread one time with my girlfriend Jill, and then made a couple of batches of Cinnamon Rolls.
But I wanted to try some homemade rolls all by myself.
Once again I turned to the blogging world for an awesome recipe, which I got here
and the verdict is EASY!!!
Well at least this recipe was easy, not only easy but soooo good!
These will definitely be making an appearance once a week in my house.
Letting the yeast, sugar and water sit.
after all the dry ingredients were added, I set it out to knead.

I have never really kneaded anything this long and it was a little tiring, but apparently it worked.

Finished product, mmmm good!
To go with it I made a Chefs Salad, with all the goodies.
French Bread Rolls
adapted from allrecipes.com

*Makes about one dozen rolls

1 1/2 cups warm water (110 degrees F/45 degrees C)
1 tablespoon active dry yeast
2 tablespoons white sugar
2 tablespoons vegetable oil
1 teaspoon salt
4 cups all-purpose flour

In a large bowl, stir together warm water, yeast, and sugar. Let stand until creamy, about 10 minutes.

To the yeast mixture, add the oil, salt, and 2 cups flour. Stir in the remaining flour, 1/2 cup at a time, until the dough has pulled away from the sides of the bowl. Turn out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl, and turn to coat. Cover with a damp cloth, and let rise in a warm place until doubled in volume, about 1 hour.

Deflate the dough, and turn it out onto a lightly floured surface. Divide the dough into 12-14 equal pieces, and form into round balls. Place on lightly greased baking sheets at least 2 inches apart. Cover the rolls with a damp cloth (or greased saran wrap), and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).

Bake for 12-13 minutes in the preheated oven, or until golden brown.

*Can freeze the rolls after baking - microwave on high for 2 minutes before serving.
