Jello Slices

As soon as I saw these cute things on Pinterest I knew I had to make them. I was worried they might be more than I bargained for but they were actually pretty simple. The kids loved them and had so much fun eating them.




First Hollow out the fruit of your choice.
I used lemons and oranges.
( My kids tried helping me with these but only Jackson my 7 yr. old was capable enough to accomplish the task)
Make your jello.
I used 8 oranges and 8 lemons and used 4 boxes of jello

Make sure they are pushed together enough that they are level when you pour in the jello.
Carefully put it in the fridge. It only took about 3 hours to set up and then I sliced them. Using a small serrated knife.

Yogurt Cream with Fruit

I am not a huge fruit person, so when I am assigned to bring fruit somewhere I am always fretting about what to make. I usually try something new, hoping to find something that really makes me Love fruit. When I saw this on Becoming Betty who saw it on Pioneer Woman, I knew I would LOVE it! It sounded very elegant and fancy, which I try and pretend to be. At the same time it was super simple.

and..........................it was GREAT!!!!!!! I love it so silky smooth and the perfect amount of sweetness. Definitely one of the best ways to do fruit. The Pioneer woman put hers in martini glasses and made it even more Fancy! I will be trying that next time for sure.

Yogurt Cream with Berries
1 1/2 cups plain, unflavored yogurt
1 1/4 cups heavy whipping cream
3/4 cup brown sugar
*Put yogurt in a mixing bowl. Add whipping cream and whisk together really well. Sprinkle brown sugar over the top and DO NOT stir. Cover with plastic wrap and put in refrigerator for several hours. After several hours, remove wrap and stir well. Spoon over fresh berries or any fruit for a really yummy treat.

BBQ side dishes

A little while ago my friend Ang had a little impromptu BBQ. I wanted to bring something so I ran to the store and got some stuff to make some Yummy Guacamole and a Fruit Dip Salad.

My SIL Summer taught me to make this super easy Guacamole. Everyone always loves it, it has even had the powers of Conversion. ( my other SIL did NOT like Guac till she tried this one, now she LOVES it!)

Super Easy Guac

3 or 4 ripe Avocados
2-3 oz of cream cheese softened
garlic salt ( to taste)
some type of acid - Lemon/Lime Juice or even some vinegar if you don't have any citrus

Mix with a fork on a plate and add everything to taste. Making sure to combine the cream cheese with the avocados.



I saw this recipe on this blog. I thought it looked right up my alley. I will basically try anything with coconut!
The topping is soooo good, crunchy, chewy and sweet. It is basically over fruit already mixed in the fruit dip. The recipe calls for grapes which I love, but I am sure strawberries or pineapple would also be great in it. This is a great dish to take to any type of potluck. It is for sure my new go to fruit dish.


Tasty Fruit Dip Salad

Large bag of grapes--red, green or both (enough for about a double-layer of grapes in a 9x13 pan)

Creamy mixture:
8 oz. cream cheese
1/3 c. sugar
8 oz. sour cream
1 tsp. vanilla

Topping:
1 heaping cup Grape Nuts
2/3 c. brown sugar
1/2 c. coconut flakes

Cream together cream cheese and sugar, then fold in sour cream. Stir grapes in with the creamy mixture then spread out in a 9x13 glass pan and refrigerate.
RIGHT BEFORE SERVING: Combine topping ingredients well and add over top of the grapes.
