Chicken Cordon Bleu

Here goes. Well I have decided to start a food blog. I know there are a million different food blogs out there and most of them are great, but I am now going to put my two cents in. If you already know me then you know how very much I LOVE food, so this isn't really a shock. I am not the most creative cook, most of my recipes are not my own but I do love to make and eat food. I have some great recipes I would love to share with anyone who cares. I am compiling a list (on the side) of all the things I want to try. All these recipes may not work but I will try and inform you of it all. This is definitely a work in progress so bear with me, and I hope you enjoy! BON APPETITE!

My first meal is Chicken Cordon Bleu that I got from the Bradshaws blog, one of the many food blogs I frequent. This is my first try at it, in fact my first try of Chicken Cordon Bleu ever. I loved it and it was super simple. I actually forgot to do the foil and it still turned out great.

Chicken Cordon Bleu Casserole

4 large boneless skinless chicken breasts
8 slices of deli ham
4 square slices of swiss cheese
1 small can cream of chicken soup
1/2 cup half and half (or milk)
1/2 a package of Pepperidge Farm Herb Stuffing
1 1/4 cups chicken broth
1/4 cup butter

Cut each chicken breast in half, making 8 pieces altogether. Top each chicken piece with a slice of ham. Cut the swiss squares in half to make 8 rectangles; top each chicken piece with a piece of cheese. Mix soup and half and half and pour over top of chicken. Melt butter, stir into chicken broth, and add stuffing. Top casserole with stuffing mixture. Bake covered at 350 for 40 minutes, then remove foil and bake for 10 minutes more.

Here is a simple salad of greens, grape tomatoes, basil and mozarella balls.
With some bread I toasted up with olive oil, rubbed some garlic on it and served it Macaroni Grill style!

Hudson loved it with a definite Thumbs Up
Presley seems confused but she ate most of her meal.
Jackson also dug in and gave it a Thumbs Up.
My biggest critic Stephen thought it was great, a keeper. My uncle Bill and Grandpa were also over and loved it. But they aren't hard to please!
